2 cups sliced shiitake mushrooms
1 sliced yellow squash
1 sliced zucchini
1 sliced bell pepper (we used orange bell pepper for this recipe)
12-18 stalks of Asparagus, trimmed (approximately 1 pound)
3 Tbsp Olive Oil
Bald Man Rub
  • Preheat oven or grill to 450 degrees.  Pre-heat cast iron skillet for 10 minutes in oven or grill. 
  • Combine vegetables in a large bowl or ziplock bag with Olive Oil.  Toss or mix vegetables to make sure they are coated evenly.
  • Place vegetables in pre-heated skillet and season with Bald Man Rub.  Cook for 30 minutes, stirring the vegetables at 15 minutes.  
       *a note that some people like their vegetables cooked a little longer.  This is a personal preference so please adjust cooking times to your liking.
