1 large butternut squash (approximately 3 pounds)
3 Tbsp olive oil
3 Tbsp Bald Man Rub
2 Tbsp butter
1 cup diced yellow onion
1/2 tsp salt (to taste)
1/2 tsp pepper (to taste)
Dash of cinnamon
6 cups low sodium chicken stock (or use regular chicken stock and remove salt from recipe)
1/2 cup heavy cream OR 1 can coconut milk
- Preheat Smoker to 275 degrees. Line a baking sheet with parchment paper.
- Peel the butternut squash, remove the seeds, and cut into one inch cubes. Place in a large bowl and mix with the Olive Oil and Bald Man Rub until coated. Spread evenly on baking sheet
- Smoke for approximately 1.5 hours (or until lightly browned). Smoker times may vary. Remove from smoker.
- Melt the butter in a soup pot over medium heat, then add the onion, salt, and pepper, and cook for 10 minutes, until the onions are soft.
Add the smoked butternut squash cubes and cinnamon, and stir for 2 minutes.
Add the stock, bring the liquid to a boil over high heat, then reduce to a simmer. Cook for 3 minutes at a simmer.
Puree the soup by cooling the soup slightly and blending in a blender (you will likely need to do this in small batches) or use an immersion blender. Once the soup is blended, add either the heavy cream or coconut milk and blend once more.
Season to taste with a sprinkle of Bald Man Rub and drizzle of heavy cream.
