Skinless pork belly
Bald Man Rub
Agave honey
1/2 cup bourbon
1 1/2 Cup apple juice
Bald Man Mop Sauce
2 disposable aluminum pans
  • Preheat Smoker to 275 degrees.  We use hickory, pecan and/or apple wood.  
  • Cut the pork belly into cubes approximately 1 to 1 1/2 inches in size.
  • Generously season the pork belly cubes with Bald Man Rub and let sit for 10 minutes before putting on the smoker.
  • Place the pork belly directly on the grill grates.  I usually place the pork belly on a wire rack and place on the grill grates to make the transfer to the pans easier.
  • Combine the bourbon and apple juice into a spray bottle and spritz the pork belly every 30 minutes for 3 hours or until it reaches an internal temperature of 175 degrees..  
  • Remove the pork belly from the smoker and place the cubes in a aluminum pan.  Pour the remaining Apple Juice/Bourbon mixture over the pork belly and season and toss the cubes with more Bald Man Rub.  Drizzle the Agave Honey over the pork belly.  Cover the pan with foil and put back on the smoker for 1 hour.
  • Remove the pan from the smoker and transfer the pork belly to the second aluminum pan.  Coat and toss the pork belly with Bald Man Mop Sauce and place back on the grill uncovered for 30-45 minutes (until you see the sauce begin to thicken and the liquid reduces).
  • Allow to cool for 20 minutes before serving.
